Sweet Potatoes with Black Beans and Cheddar
· 16 to 20 oz. cubed sweet potatoes
· 1 cup black beans
· 1 cup shredded cheddar
Preheat the oven to 425 degrees.
Put the cubed sweet potatoes on a sheet pan covered with parchment paper. Drizzle lightly with olive oil, mix to spread the oil, then spread them out on the pan.
Bake until the sweet potatoes are soft, about 15-20 minutes.
Top the sweet potatoes with the black beans and cheddar. Return to the oven and bake another 5 minutes or until the cheese melts.
Serve warm.
