Rustic Red Cabbage

1 red cabbage
2 Tb butter
1 med. onion, sliced
6 peppercorns
1 Tb. red wine vinegar
1 lg Granny Smith apple, sliced and peeled
½ ts salt
2 Tb sugar
⅛ ts ground cloves

Cut cabbage in fourths, remove and discard core, and finely chop cabbage. Melt butter in a large saucepan, add onion and cook until tender. Add remaining ingredients, stir to combine, and simmer at least 20 minutes. Serve warm or cold.
