Red Quinoa Salad

Prepare 2 cups of quinoa (2 cups before cooked). While quinoa is cooling, mix chopped vegetables and dressing. Add cooled quinoa to vegetables and dressing. Serve chilled.
1 chopped red or orange or yellow pepper
1 bunch green onions, sliced on the bias
1 chopped mango
1/2 to 1 c. sliced grapes
half package roasted/salted pumpkin seeds
1/4 to 1/2 c. chopped cilantro
Dressing:
1/3 c. orange marmalade
1/4 c. lime juice
1/2 c. olive oil
2 Tb cumin
