Cooked Black Beans
This is the suggested preparation of black beans
that came with the Blue Apron meal kit.

1 15-oz can black beans

1 shallot

1 Tb light brown sugar

Peel and thinly slice the shallot. Drain and rinse the black beans.

Heat 2 ts olive oil on med. high until hot. Add the shallot and sugar. Season with S&P. Cook, stirring occasionally, 2-3 minutes, or until lightly browned and softened.

Add the beans and 2 Tb water; season with S&P. Cook stirring occasionally an dmashing the beans with the back of a spoon, 3-4 minutes, or until thinkckedn and the beans are broken down.

Turn off the heat and let cool slightly before serving.
