Baked Cauliflower  


       1 lg head cauliflower cut into bite size pieces (approx. 6 cups)
       1/2 c. Mayonaise
       1/2 c. Sour Cream
       2 c Colby Jack cheese (or cheddar)
       8 oz. container sliced mushrooms
       1-2 Tb butter


Preheat oven to 425 degrees. In a large pot boil water and cook cauliflower for 8-10 minutes; drain and cool. Saute mushrooms in butter. In a large bowl combine sour cream, mayo, half the cheese, mushrooms and cooked cauliflower and mix well. Place in baking dish and cover with remaining cheese. Bake 15-20 minutes until cheese is melted.
