White Chili

20 oz. chicken breasts (3 breasts)
2 (14 oz.) cans white (northern) beans
2 (14 oz.) cans chicken broth
2 (14 oz.) cans diced or stewed tomatoes
1 green pepper, chopped
1 onion, chopped
2 ts. minced garlic
1 Tb. chili powder
S&P
1-2 cups fresh spinach, stems removed


Cook chicken (400 degrees, 20 minutes); pull apart
saute pepper & onion in olive oil, then add garlic
combine all ingredients except chicken and spinach, simmer 1/2 hour
add chicken & spinach, simmer another 15 minutes
