Shannon's Chili
1 c. chopped onion
2 Tb chopped garlic
4 cans beans, drained: 2 red kidney beans, 1 black bean, 1 navy beans or other
4 (15 oz.) cans diced tomatoes
12 oz. Boca Crumbles
2 c. veg. broth
2 ts ground cumin
1 Tb Chili Pwd
1/2 ts ground coriander
1/4 ts. oregano
Saute onion and garlic in olive oil. Add remaining ingredients. Heat on low for 2 hours.
Optional additions: celery, carrots, peppers, zucchini, corn, etc.
